RE: Anyone have photos of their dutch oven creations?

I tried a couple of new dishes this weekend. Inspired by AZCampinfool, I did ribs,which I slow roasted in the dutch oven and then finished on the grill. Open Fire Grilled Pizza

I finally got around to making a grilled pizza over a camp fire. It was so good! It was very easy as well. I actually purchased the dough from Domino's for a dollar per (dough)ball. You need to prepare all of your toppings ahead of time, i.e. cook your sausage, beef, peppers, onions, etc. All you have to do is shape your pizza dough, brush with olive oil and toss onto a hot grill and cook for 2-3 minutes. I actually used my 14' dutch oven(inverted) to create an oven over the fire. Then take the pizza off of the grill, and brush the uncooked side with olive oil. Next, flip your pizza over and put on your sauce, cheese, and whatever toppings you prefer. Then, return your pizza to the hot grill, cover and cook for 4-7 minutes or until cheese is melted. Jon W & Warfire80; here is my recipe... Monkey Bread 2 cans(8) Grands biscuits (butter variety, not homestyle) 3/4 cup of sugar 3/4 cup of brown sugar 1 tablespoon of cinnamon (more/less to taste) 1 stick melted butter Icing 1 cup powdered sugar milk Combine sugar, brown sugar, and cinnamon in a large Ziploc bag. Shake to mix. Cut biscuits into quarters, my wife uses clean scissors...quick and easy. Drop a few of the biscuit pieces into the sugar mixture and shake to coat. In a cold 12" DO, begin placing the biscuit pieces, cut side down. Place the pieces in random directions, barely touching, all around the DO until you have used all of the biscuit pieces. You will have to squeeze the last few pieces in, just try not compress the pieces together too tight. Drizzle the melted butter over the top of your bread. Cook for 25-30 minutes in a 350 degree DO (15/top-9/bottom) until the bread is browned and "crusty", like toast. Rotate your DO after 15 minutes; turn your DO 1/4 turn counter clockwise, and turn your lid 1/4 turn clockwise; this helps to even the browning process. While the bread is cooking, place the powdered sugar in a bowl and add a small amount of milk; whisk until smooth. If you want your icing thinner, add more milk; thicker, add more sugar. When your bread is finished, pour or spread your icing on top of you bread and enjoy.

RE: Fresh Salsa Recipes?

Have you ever tried FRUIT salsa? Mix, finely chopped strawberries, finely chopped kiwi , and finely chopped pineapple(pineapple tidbits in a can, drained). Add a small bit of fresh lemon/lime juice and a small amount of the reserved pineapple juice, if desired. You can even add some chopped fresh mint. Serve with "chips"; which are fresh flour tortillias(cut into wedges) and are flash fried,drained on paper towels, and dusted with cinnamon sugar as soon as they come out of the oil. Todd

Bearnkat, I appreciate the compliment, but I am just a novice; I've been on the IDOS wesite...those chefs are AMAZING! I would love to be able to go to a DOG or the National Championships; they just don't have any events like that here in the south. Thanks again though. Todd

RE: Biscuits on the Grill??

I have done it using a Camp Chef Grill Box. The burner under the biscuits was off, and the other burner was on high, basically using indirect heat inside the grill box. In the photo, my biscuits were not quite finished, and also I just spun the foil "tray" around to keep the edges of the biscuits that were closest to the heat from browning too quickly. I also have prepared them in one of the Coleman collapsible ovens, you just need to cover the tops of the biscuits with a piece of foil for the first half of your cooking time so the tops don't brown too quickly. RE: Am I the only one?

Our family spent the last three years tent camping. This year we finally were able to get a PUP and low and behold the price of everything just skyrocketed. My three options were; just leave it sitting in the driveway, take fewer trips, or take shorter trips and keep close to home. We live outside of Nashville, TN and would regularly go to Gatlinburg or Pigeon Forge. We also went on several outings to NC, KY, and we went to Disney World as well. After we purchased our PUP in the spring, we upgraded(V8)our TV also. Now, the cost of our camping trips are considerably more than just a tent site with water/electric and the fuel for our old V6 Explorer. It did not take me long to forsake the KOA and Jellystone's of the world, as well as most of the other commercial campgrouds. It led me to discover the vast number of state and federal parks in the TN area. We have come to enjoy them as much as most of the other places we have camped at between 1/2 and 1/3 of the cost. We really enjoy going camping and have discovered we don't have to be 250 miles away from home to have a great time. We have planned a longer trip in early fall to Topsail State Park in FL, but other than that we usually stay within 75 miles or so from home. It's better than just staring at our PUP sitting closed up in the driveway all year...MUCH better!

RE: Storage Mods

Lovedays; We just added that organizer last weekend. It seemed to hold everything pretty well. I will definitely keep an eye on it this weekend when we go out again to make sure it is not too much weight. Most of the items in the pockets are fairly small and light. I'm not sure what the cumulative weight of the items are though. Something to keep an eye on, thanks. Cutler6

Storage Mods

RE: Thetford cassette toilet

I had the same thing happen to me. Your toilet is not broken. If you keep holding your hose there, I actually stick mine in the water, even though the water level is at the top of the fill funnel, the water continues to go in and will fill up the tank. Since this is my first pup, I thought I was crazy the first time I tried to set mine up. I don't know if they all are supposed to do this, but that is how I set mine up, and everything works fine.
